pumpkin Tis the season for pumpkin everything.

I realize it's super cliche to go ham on everything pumpkin spice. The thing is, I love pumpkin all year round, but this time of year it's EVERYWHERE and I can't help but get a little over excited.

As usual, I prefer to keep my recipes lower sugar and higher protein because it feeds my muscles and keeps me from anxious sugar rushes and crashes.

Here are some of my latest creations..enjoy!

PUMPKIN WAFFLES (gluten-free)

Inspired by Amanda Bucci's one carb waffles

  • 1 Scoop PEScience Snickerdoodle Protein
  • 1 whole egg
  • 1 tsp baking powder
  • 1/4 cup pumpkin puree
  • pumpkin spice
  • water if needed
  1. Mix your batter to desired thickness - only a splash of water if it's REALLY thick.
  2. Heat waffle iron and spray with coconut oil or cooking spray.
  3. Place batter in middle of iron and spread out with a spatula.
  4. Remove when green light goes off.
  5. Optional: cut in half, fill middle with Chobani pumpkin spice yogurt and syrup, top with the same, and peanut butter if your really like living on the edge. Add a little more pumpkin spice and you're good to go!

HIGH PROTEIN PUMPKIN PUDDING (gluten-free, vegan)

  • 1/2 pack of gelatin
  • 1 block soft tofu
  • 1 large can pumpkin puree (or 2 normal sized cans)
  • Almond milk
  • 3 scoops PEScience Snickerdoodle Protein
  • Vanilla extract
  • Sugar-free maple syrup
  • Pumpkin spice
  • Truvia (if desired)
  • Gluten-free graham crackers for topping (if desired)
  1. Add boiling hot water (around 1/2 cup) to half a pack of gelatin. Do a full packet and more water if you want more gel to your pudding. Stir for around 5 minutes until fully dissolved.
  2. Blend tofu, pumpkin, almond milk, protein powder and flavorings.
  3. Slowly blend in gelatin.
  4. Put in a large baking tray or container and refrigerate around 3 hours.
  5. Serve with graham cracker crumbles, a drizzle of maple syrup and a dash of sea salt!

EASY PUMPKIN PUDDING FOR 1

  • 1 cup plain Greek yogurt
  • 1 scoop PEScience Snickerdoodle protein powder
  • 1/2 cup canned pumpkin
  • Pumpkin spice
  • Truvia (if desired)

Simply mix and enjoy!

MY EVERY DAY PUMPKIN SPICE CAPPUCCINO

Ok this is my guilty pleasure. I brew Trader Joe's Pumpkin Spice coffee blend, then froth some half and half with vanilla stevia and top with pumpkin spice. I'm hooked!

Cooking with Maille

I was recently sent some products from Maille to test out.

I adore Dijon, and have used Maille's products in France and Canada most of my life.  I can eat mustard with pretty much any meal, and Maille definitely reigns supreme.

Using the creamy mustard and gherkin pickles (cornichons!) they sent, I made a retro looking meatloaf which was ridiculously easy and delicious.

Turkey Meatloaf à la Maille

  • Pack of lean ground turkey
  • 2 heaping tsp of Dijon cremeuse
  • Handful or cornichons
  • Mixed seasonings (21 Seasoning Salute from Trader Joes)
  • Black pepper
  1. Line pan with parchment paper
  2. Mix ingredients in large bowl
  3. Press into pan
  4. Bake at 350F for 30-45 minutes
  5. Slice and serve! (With extra Dijon of course)
Galentine's Weekend

Valentine's Day was the perfect excuse to celebrate love all weekend long. IMG_7616

I woke up Saturday and coerced myself into a mini workout at the gym.  By the time I arrived home these beautiful roses were waiting for me from my long distance love.

I celebrated with a heart protecting beet smoothie:

After getting all dolled up, I dropped off some homemade treats for the girls at work then made my way downtown to meet up with Jenny to kick off our epic Galentine's Day weekend.  We did it all: Fifty Shades of Grey, a classy cocktail out, a home cooked feast, pink Champagne, dessert covered in whipped cream, and a few hours of fun dancing at a nearby pub.

The next morning we redeemed ourselves with a spicy green juice and a long walk on the seawall.  Jenny, my personal trainer and beautiful friend, shares the same love in finding balance between indulging and being a health nut.  This leads us to getting up to our worst and best behavior together.

After our beautiful walk we continued the celebration with a big batch of gluten-free pancakes adorned with heart shaped fruit, coconut whipped cream, and a billion other fixings (peanut butter and jelly on pancakes?  YES.)  If you love eating and working out, we've got some exciting things coming your way!  You can get a taste of it our new instagram account.

I walked home in the sunshine feeling lucky to have a friend who feeds my heart and soul so generously.
